Pizza Margherita with Arugula

 

Gourmet twist on an Italian favorite.

Ingredients:

2/3 cup crushed plum tomatoes
1/4 cup chopped basil
1 clove finely chopped fresh garlic
1 tbsp extra-virgin olive oil
1/2 cup grated Romano cheese
1/2 cup grated Fontina cheese
2 cups roughly chopped arugula
2 tbsp balsamic vinegar
Ready-made pizza crust

To make sauce combine tomatoes, basil, garlic, and 1/2 tbsp oil in a medium size bowl.  Stir well and set aside for up to 1 hour.  Mix cheeses together in a bowl.  In a third bowl, combine arugula, remaining oil, and vinegar; season mixture with salt and pepper.  Grill one side of crust.  Turn over while second side is grilling, spread cheese mixture on top and dollop with sauce.  Top with aruguala mixture.  Rotate 3-4 minutes until bottom is golden brown.
