| Bay Leaf Roasted Potatoes |

This aromatic dish is simple and easy to vary using different herbs.
Ingredients:
3 tbsp olive oil 4 cloves garlic 2 lbs small potatoes 3 bay leaves
Preheat oven to 400 degrees. Spread olive oil into 9 x 13 baking dish. Cut potatoes into 1/2" slices and toss with oil to coat, then arrange in single layer in pan. Add peeled garlic cloves. Lay bay leaves on top of potatoes. Bake for 40 minutes or until tender. Disgard bay leaves.
