Mint Salsa

 

Cool and refreshing - a different spin on salsa

Ingredients:

5-6 firm tomatoes
1/2 medium onion
2 tsp lemon juice
1/4 cup fresh mint
3 cloves garlic
1 pinch of sugar
1/2 tsp salt
1/4 cup fresh parsley
2 sprigs oregano

Place tomatoes, onions, garlic, and herbs in food processor.  Process in short bursts until tomotoes are desired consistency.  Strain off excess juice.  Stir in lemon juice, salt and sugar.  Let sit for 10 minutes for flavors to blend.  Serve with chips, rice or meat.
