Lemon Grass Chicken

 

A piquant marinade for grilled chicken.

Ingredients:

6 stalks lemon grass
4 tsp Asian fish sauce (nam pla)
4 tsp minced garlic
1/4 cup vegetable oil
4 tsp soy sauce
4 tsp sugar
1 tbsp lemon juice
6 boneless, skinless chicken breasts

Trim outer leaves from lemon grass.  Cut remaining lemon grass into 1/2" lengths.  In a food processor, process lemon grass to a hair-like texture.  Place in a bowl; add remaining ingredients except for the chicken.  Add chicken to marinade, keep refrigerated for 30 minutes up to 8 hours.  Grill chicken until cooked through and juices run clear when pierced, 3 to 4 minutes per side.
