Bay Leaves are the aromatic leaves of several species of the Laurel trees. The most common are Turkish and Californian. Fresh, the leaves are mild, but once dried several weeks their flavor becomes much stronger, similar to oregano or thyme. Bay Leaves are used to flavor soups and stews, meats and seafood, and vegetable dishes. When crushed, bay leaves contribute more of their fragrance than whole leaves. If stored properly in a cool, dark place, Bay Leaves will last for several weeks. Source: Answers.com
