With a mild onion flavor, chives can sometimes be substituted for onions. Grown in clumps, like grass, the thin leaves can grow up to 12 inches tall, and is the part of the plant used in nearly all cooking with chives. Store in refrigerator in plastic crisper.
Chive flowers are also edible and can be used the same way as chives. They are a little hotter than chives. Their delicate purple blossoms add a dramatic note to cheese logs or balls. (Separate the individual blossoms and roll the log or ball in the blossoms). |
